  • 0.75 lbs. Crystal Malt 60L

  • White Labs Irish Ale

  • 0.5 lbs. Brown Sugar
  • 0.5 lbs. Clear Candi Sugar

Brewing Notes

Grains steeped at 150F for 15 minutes. 60 minute, ~3 gallon boil. Candi sugar and brown sugar dissolved at beginning of boil. All hops in pellet form. Flavor hops added with 15 minutes remaining in boil. Aroma hops added with 5 minutes remaining in boil. Dry hops added upon racking to the secondary fermenter after 7-10 days in the primary fermenter. Bottled after 2 1/2 weeks in the secondary. This beer turned out pretty good. As with most of the Austin clone kits, it's nothing like the original (Old Peculiar), but there's a spiciness to it that's very good. The brown sugar is also noticable. This brew didn't age too well - it peaked at about 2 months and then went downhill pretty quickly after that. We had to dump the last few bottles of it out.
