Triple infusion mash:
- 30 minutes at 135 F starting with a 0.8 quarts/lb
ratio. 17.6 quarts of strike water.
- 30 minutes at 144 F with 3 quarts of boiling water
added.
- 30 minutes at 158 F with 6.7 quarts of boiling
water added.
Which turns out to be a 1.2 final water/grain (quarts/lb)
ratio with 6.8 gallons total water. Mash efficiency of 64%.
Then fly-sparge to collect a total of 10.5 gallons of
sweet wort. Initial gravity of full boil is 1.059.
Boil 10.5 gallons down to 9 gallons in 60 minutes. The
hops added at the appropriate times. Hops were whatever
was in the freezer. After cooling, pitched yeast, which
took off after 4 hours.
Turned out delicious and pretty close to the real thing.
