  • 1 oz Hallertauer (15 min)
  • 0.9 oz Saaz (15 min)
Misc
  • 0.25 oz chopped ginger root
  • 0.65 oz ground corriander seeds (15 min)
  • 0.25 oz ground grains of paradise (15 min)
  • 1.5 tsp Wyeast yeast nutrient (15 min)
Yeast
  • Cultured from bottles of Delirium Tremens, stepped up to a 1.5L starter.

Brewing Notes

Triple infusion mash:
  • 30 minutes at 135 F starting with a 0.8 quarts/lb ratio. 17.6 quarts of strike water.
  • 30 minutes at 144 F with 3 quarts of boiling water added.
  • 30 minutes at 158 F with 6.7 quarts of boiling water added.
Which turns out to be a 1.2 final water/grain (quarts/lb) ratio with 6.8 gallons total water. Mash efficiency of 64%. Then fly-sparge to collect a total of 10.5 gallons of sweet wort. Initial gravity of full boil is 1.059.

Boil 10.5 gallons down to 9 gallons in 60 minutes. The hops added at the appropriate times. Hops were whatever was in the freezer. After cooling, pitched yeast, which took off after 4 hours.

Turned out delicious and pretty close to the real thing.
