Brewing Notes

All water filtered through the filter James sent me for my birthday.

Put 2.5 gallons in the fermenter

Put 1.5 gallons in a pot on the stove

Turned on the burner for 30 seconds, but quickly found that heating the water was unnecessary. Stirred 17 lbs of honey into the water in the pot. Added this must (minus a couple cups) to the fermenter. Mixed 16 oz of nestle cocoa powder into this small amount of must, and added that to the fermenter.

Rehydrated the yeast (5g of Red Star Premier Cuvee) in 1/4 cup of ~100F water plus 5.5 grams of GoFerm. Let this sit for 15 minutes. Yeast slurry added to the fermenter, along with 5 grams of fermaid K. Aerated like crazy.

OG measured at 1.120 (originally i got an OG of 1.124, so I added a bit more filtered water).
