Brewing Notes

Mashed 14.5 lbs of grain with 18.1 quarts of water (1.25 quarts/lb) at 158 F for 90 minutes. 5 quarts of water was heated to boiling and added at the end of the mash to reach the mashout temperature. The mashtun was drained, collecting 3 gallons, and another 13 quarts heated to 170 F was added for a 2nd sparge, collecting another 3.3 gallons for a total of 6.3 gallons of sweet wort. A 90 minute boil with the adjunct sugars and hops reduced the yield to just under 5 gallons.

After 2 weeks in the primary, it was racked to secondary with a gravity of 1.018. And fermentation was still going. The first few days in the primary showed vigorous fermentation. Another week and a half in the secondary finished off fermentation and allowed clarification.

47 12oz bottles were filled. Initial taste was pretty good. I reduced the corn sugar added at bottled from the normal 5oz to 4.5oz. Hopefully this will reduce the final carbonation a bit and make the beer a bit more to-style.
