Ingredients

Grains
  • 12.5 lbs Golden Promise (2oz of it moistened and toasted for 1/2 hour at 350 degrees in the oven)
  • 2 oz Peat-smoaked malt
  • 12 oz British Crystal 60L
Boil additions
  • 4 oz Lyle's Black Treacle
  • 4 oz cane sugar
  • 1 tsp Irish moss (15 min)
Hops
  • 1.2 oz East Kent Goldings pellet (90 min)
  • 0.5 oz East Kent Goldings pellet (15 min)
Yeast
  • Wyeast Scottish Ale #1728

Brewing Notes

Mashed 13.4 lbs total grain with 14.75 quarts of water (1.1 quarts per lb of grain) at 150 F for 90 minutes. The mash was fly-sparged with 7 gallons of 170 F for 20 minutes and 7 gallons were collected. A 90 minute boil with the adjunct sugars and hops reduced the yield to just over 5 gallons.

This beer was absolutely fantastic. Very close to Belhaven Scottish Ale. We served it on Nitrogen/CO2 mix through a stout faucet.
