  • 8 oz. Caravienne
  • 4 oz. Honey Malt
  • 2 oz. Special B
  • 2 oz. Black Roasted

  • 8 lbs. Ultra light Malt
Hops
  • Bittering: 1 oz. Northern Brewer (6.8%)

  • Aroma: 1 oz. Willamette
Miscellaneous
  • Whirlfloc - 1 tablet (clarifier)
  • 2 tsp Cinnamon
  • 1 tsp All-Spice
  • 1 tsp Ginger
  • 3/4 cup Atomic Fireballs
Yeast
  • White Labs California Ale Yeast (WLP001)

Brewing Notes

3 gallon boil. Grains steeped at ~150F for 30 minutes. Extract and Northern Brewer Hops boiled for 60 minutes. Whirfloc added with 20 minutes remaining in the boil. Willamette hops, cinnamon, ginger, all-spice and Atomic Fireballs added in the final minute of the boil. The candy melted pretty quickly into the wort. Wort was chilled and the yeast was pitched.

After aging a few weeks, I entered this brew in our Winter Beer comptetition. It's not bad. The base is pretty good, but the spices are a bit much. As advertised the atomic fireballs contributed only to the aroma and not to the taste. Unfortunately, the ginger and other spices were just a bit too much.
