Ingredients

Fermentables
  • 5 gallons apple cider from Weber Cider Farm (no preservatives added)
  • 3 lb. clover honey
  • 1 cup (unpacked) brown sugar
  • ~1/3 lb. Light Dried Malt Extract
Miscellaneous
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 7 cinnamon sticks
  • 1 tsp whole cloves
  • 2.5 tbsp. Yeast Nutrient
Yeast
  • White Labs English Cider Yeast WLP775



Brewing Notes

Add honey to 3/4 gallon of the cider, and heat in order to dissolve the honey. Skim the scum (wax) off the top of the cider when it appears. Add brown sugar, allspice, nutmeg, malt extract, and yeast nutriet, mixing well. Boil cloves in a small amount of water in another pot for several minutes. Add the cider/honey mixture and clove water to the primary fermenter. Top up to 5 gallons with cider. Drop in the cinnamon sticks. Pitch yeast. I had basically no idea on the amounts for the spices. I may need to add more when I transfer to the secondary.
